I’m always looking for quick and easy weeknight meals that are also budget-friendly and delicious, and these hot honey pork chops check all the boxes. I couldn’t be happier with how they turned out. I love the flame-kissed flavor the grill adds to these chops, and how the simple seasonings and caramelized hot honey work together to create the perfect main dish. I’ve tried this method with pork tenderloin, and let me tell you, it did not disappoint! It’s super easy! Just season, grill, and brush on the hot honey, plate them, and serve with your favorite side dishes. Perfect solution for those looking for a quick and delicious weekday dinner!

Ingredients

  • 4 bone-in pork rib chops, about 1″- 1 1/4″ thick
  • Morton kosher salt
  • Black pepper
  • Paprika (not smoked)
  • Garlic powder
  • Olive oil
  • Honey
  • Apple cider vinegar
  • Red pepper flakes
  • Digital meat thermometer

How to Make Hot Honey Pork Chops

  1. Make the Hot Honey: In a small pot, warm the honey over medium-low heat until liquified. Add the apple cider vinegar and pepper flakes, stir through, and remove the pot from the heat.
  2. Preheat your grill to 375 degrees F.
  3. Make the Spice Rub: Combine the kosher salt, black pepper, paprika, and garlic powder in a small bowl.
  4. Season the Chops: Brush the chops with a little olive oil and season evenly with the spice mixture.
  5. Grill Them: Place the chops on the grill, and cook them until they reach an internal temperature of 135 degrees F.
  6. Brush on the Hot Honey: Apply hot honey baste, turn the chops, and continue grilling for 1-2 minutes. Repeat the process until the honey is nicely caramelized. The chops are done once they reach an internal temperature of 145 degrees F.
  7. Serve: Remove the chops from the grill and serve them with 1-2 side dishes.
  8. Leftovers: Store leftover chops in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or air-fryer until warmed all the way through.
