How to Keep Turkey Drippings from Burning

The best way is to add about 1/2 cup of liquid, like no salt added chicken or turkey broth or water, to the bottom of the roasting pan. Doing so will keep the turkey drippings from reducing too much and potentially burning. Check on the turkey halfway through cooking time and add more liquid as needed.

How to Collect Drippings for Turkey Gravy

Remove the oven-cooked turkey from the roasting pan and set it aside on a clean cutting board. You will see the drippings on the bottom of the pan. It can yield anywhere from 1-1 1/2 cups of liquid.

  • Drippings & Stock: Pour the turkey drippings from the cooked turkey into a fat separator. Let stand for a few minutes until the fat rises to the top. Pour out the liquid, leaving the fat behind. Combine cleaned drippings with enough turkey stock to equal 4 cups total. Set aside.
  • Start the Gravy: In a medium-sized saucepan, melt butter over medium heat. Next, add four and whisk to combine. Let the mixture cook for 15-20 seconds while steadily whisking.
  • Add the Liquid: Slowly whisk in the drippings/stock mixture and poultry seasoning, and let the turkey gravy bubble and thicken.
  • Reduce heat to medium-low and let the gravy simmer for 1-2 minutes.
  • Season: Taste and season with salt and black pepper to taste.
  • Transfer and Serve: Remove the saucepan from the burner, and transfer the turkey gravy to a gravy boat or preferred serving dish. Drizzle over mashed potatoes, turkey, sweet potatoes, stuffing, and green bean casserole!
  • Leftovers: Store the leftover gravy in an airtight container in the fridge for up to 3 days. Reheat in the microwave or a pot on the stovetop. If the gravy becomes too thick during refrigeration, thin it out with 1-2 tablespoons of water or turkey stock.
